EDUARDO AND SYLVIA RALLO

Co-Founders

Eduardo and Sylvia Rallo are both originally from Cuernavaca, México. They moved to the US to pursue higher education and they met by chance at Harvard University. They have been married for twelve years and are the proud parents of three wonderful children Emilano, Santiago and Natalia. The Rallos have always shared a deep passion for food.  This passion has led them on a quest around the world to explore the local specialties and eateries of different places and cultures.

The Rallos' first official food collaboration was the successful World Wrapps Restaurant, an idea born from their desire to bring great flavors from around the world to a convenient environment for the customer-on-the-go. In 1994 it won the Nation's Restaurant News Hot Concept Winner award. The Rallos quickly expanded the business into a 26-store chain of innovative, quick-service gourmet restaurants.  The Rallos then created a major food enterprise, Resmex Group, Inc., which manages five restaurants, four of them on Santana Row in San Jose, California—Consuelo Mexican Bistro, El Jardín Tequila Bar, Roux Louisiana Kitchen and Thea Mediterranean and Colibri Mexican Bistro in San Francisco. These locations allow the Rallos to bring the authentic flavors from their own and other cultures to the Bay Area. Their approach is to combine fresh ingredients and recipes made from scratch, to create great food delivered in a sophisticated environment with outstanding service, bringing Mexico's timeless traditional cooking to their new home in the Bay Area. Both Consuelo Mexican Bistro and Colibrí Mexican Bistro are a testimonial of the Rallos' undying dedication and passion for traditional, delectable food. The company currently employs over 250 employees.

Eduardo Rallo is Chairman and CEO of Resmex Group. He is also co-founder of Farmacias Remedios, a pharmacy chain focused on the Hispanic Market. Farmacias Remedios currently has three stores and plans to open five more before the end of the year. Furthermore, he is a Partner at Pacific Community Ventures (PCV), a community-focused venture capital fund that has a double bottom-line approach on investment in some outstanding California companies like Timbuk2, Beacon Fire and Safety, Bentek, Niman Ranch and SuVianda Supermercados. Apart from being on PCV’s portfolio company board, Eduardo is also a board member of the UCSD Alumni Association, Moving Solutions, New Key Financial and Me.com.

Sylvia Rallo is currently Resmex Group's Chief Operating Officer. She obtained her bachelor's degree in Accounting from Tecnológico de Monterrey, in México, has a diploma in Hotel Management from Stout University, and a Finance Diploma from Harvard University. From her signature hands-on approach to her vast knowledge of Mexican cuisine, Sylvia lends her specific expertise to every restaurant. It is her ability to both identify and blend the specific ingredients needed for the many different cultural dishes that make them so rare and special, and it is precisely these unique dishes that the public enjoys and seeks. Her outgoing personality has endeared her not only to her co-workers, but to all those who have had the opportunity to encounter her creative attitude in building new enterprises.

GABRIELA ROSADO

z2

Director of Operations

Originally born in Brownsville Texas, Gabriela Rosado returned with her parents to their native city of Cuernavaca, Mexico when she was just two years old. There, in the “city of eternal spring,” Gabriela was exposed to a rich and varied Mexican cuisine, more importantly she became immersed in the restaurant business, working at her parents’ taquerias and small family restaurants. Since the hospitality industry was already in her blood, Gabriela chose to pursue it professionally and enrolled at EuroAmérica University, receiving a degree in Hotel Management and Gastronomy in 1997.

Gabriela began her career as Front Desk Clerk and Administrative Assistant at Club Coral Cuernavaca, followed by a stint as Concierge at the Camino Real Sumiya. In 1999, her passion for travel and adventure drew her to Princess Cruises, where she initially worked as buffet stewardess, assistant waitress, and waitress before advancing to Junior Assistant Food & Beverage Manager. Gabriela received accolades in that position and was transferred to the prestigious Queen Mary 2, earning the title of Food & Beverage Controller. During her second contract on board the massive ship, she was given the opportunity to work as Assistant Public Rooms Manager and Food & Beverage Supervisor. As one of the cruise line’s most promising young managers, Gabriela was sponsored by Cunard to attend a Strategic Leadership Training program at Cornell University’s world-renowned school of hospitality. Gabriela then continued her career at sea, which ultimately encompassed a total of eight different ships over seven years. “It was a great experience to travel around the world, giving me an opportunity to appreciate many diverse cultures, taste many flavors, and meet some wonderful people,” she recalls.

But Gabriela was ready to work back on shore; when she learned of the Resmex Group, founded by an innovative couple from her hometown of Cuernavaca, she knew she wanted to be a part of it. After just a year with the organization, Gabriela was promoted to District Manager. “My job is challenging, but my passion for this industry drives me to focus on what’s best for our guests and our establishments,” explains the young manager. Constantly looking for ways to be innovative and creative, Gabriela is dedicated to offering a great variety of fine food and drinks that will, as she says, “captivate our customers and invite them to return.” Her commitment to rigorous staff training and team-building results in the high standards that have become a Resmex Group signature.
